Last question for tonight - I promise!
I'm doing an 11x15 sheet cake, but I was only going to do one layer. There are going to be around 50 people at the rehearsal dinner.
My question is whether it will look odd to just have one layer. I also want to make sure there will be enough cake for around 50 people.

Honestly, that sounds as if it may be too skimpy. I'm doing an 11x15 next week and I was going to bake 2 separate layers, fill, frost and decorate. I was planning on using the cake extender recipe from this site, never used it before but I've read nothing but rave reviews.
When I do a single layer 11x15 sheet cake, no filling, I quote it at 25/35 servings (2x3"/2x2" slices). I don't think it will look odd, but I would be afraid you would run out of cake!
You could get 50 servings (2x2" slice) out of the 12x18" sheet. I figure that size serves 36/54!

I quote 11X15 as 30 servings, but it also depends on how much other food you are having. In New Orleans most of our functions the cake is cut last and alot of people fill up before then. Lots of exposure for the cake and usually pleanty of leftovers. There is a cultural differance from place to place. Since I have moved to MS, i have learned that you had better take your pictures as soon as you get it set up because they're going to cut that cake before most people finish their main course and all that will be left is a pile of crumbs! (and they cut the peices too big too)
If more servings are needed i prefer to do a 2 layer half sheet, its just as much cake but with less surface area to decorate - sometimes that big open white sheetcake looks so stark and undecorated if you don't put enough on it, just my preferance to stack the layers. It looks more formal and less like a "mass feeding" like for school/church functions, takes up less table space, has more height to it and generally makes a better showing.
I have done 2-11x15 cakes (in my photos) They feed 30 people.
I used two cake batters. It was just one layer.
