Has anyone ever tried to do this....

I'm trying to find a great filling for cupcakes that does not have to be refrigerated and I've racked my brain and my husband's brain all night and all we came up with was.....

Mixing in some of the sauce/jelly from the can of cherry pie filling in with some of the regular butter cream to get a cherry butter cream that is still smooth and chunkLESS.

I'm making a cake for someone and it calls for cherry pie filling in the center so I have that on hand... I just want to knock these people out with good stuff lol...

My plans are these PLEASE FEEL FREE TO CHANGE THEM! lol

Chocolate cupcakes Yellow cupcakes
1/2 chocolate butter cream 1/2 regular butter cream (on top)
and doing opposite what's on top...
1/2 chocolate butter cream filling 1/2 regular butter cream filling.....
I just don't know though because I wanted something more then just butter cream filling....
do you think the cherry pie filling sauce will make it better? Do you think it'll work with both the chocolate butter cream and the regular?

Do you have any other ideas for a knock out filling for cupcakes I could do???

These cupcakes are going to be dropped off at the craft store for the girls that put up with my crazy demands of "get the wilton lady to stock this ASAP" or "can you go in the back and see if you have 10 more of these?" lol... so I'd like for them to be great! And I may even get some orders out of this I don't know yet...

I also want to drop some off to our rental agency (Rent a Center) for the great people there that put up with me being a royal PITA when my computer messes up or I break it lmao...

So I'm open to any and all ideas on NON-refrigerated fillings as these will be sitting out and MAY not be able to be refrigerated.

I use the filling from the 2lb sleeves that you can get at restaurant supply stores or from cake suppliers online.

They are shelf stable for a few days ( or long I don't know they never sit around more than a day)

I don't have access to any of that locally and wanted to deliver these today (already told the girls at the craft store and they are looking forward to it) since I've been promissing to bring them something for a while now lol... so I'm trying to work with what I have on hand...

I have pudding and I have mousse but they both need refrigeration... I don't want to have to cook the frosting or anything like that I'm looking for something quick, simple, and cheap to create/make since these aren't paid orders, I just don't want anyone getting sick lol.

Well I tried the cherry pie filling sauce mixed in with regular butter cream and it didn't work... once I got it mixed in to a smooth consistancy it didn't taste any different lol just turned pink... so I'm guessing I'll just filling them with butter cream. icon_smile.gif

This is probably too late, but maybe you can use this idea in the future. Cruise the ice cream topping aisle. I love to mix caramel, butterscotch, etc into my buttercream.

It's not too late lmao.. I got lazy and discouraged and have yet to finish them.... Hubby is helping me now by making his famous chocolate butter cream lol. With the heat and humidity today it's taking more PS then usual lol...

I think mixing in ice cream toppings is an excellent idea! I may have to postpone this delivery until tomorrow lol thank god they aren't for a paid order lol.

I like to mix jam into buttercream, I make homemade jam so it always tastes better. There are a lot of things you can add, but I do think freshness is the key. You could try this recipie its really good in chocolate cupcakes and should do well without having to be kept cold.
2 cups powdered sugar      1/4 cup shortening
1 cup marshmallow cream       3-4 tsp milk
1/4 butter softened        1 tsp vanilla

italian meringue buttercream is also a very nice alternative to plain ole' "american" buttercream. it does not need to be refrigerated for the first day or so as long as its not too hot. you can mix in all kinds of things, fruit puree, espresso, liquors, chocolate etc. its delicious!

I want to thank you all for your continued ideas! And I hope people keep coming with them! I love filling cupcakes and I love new ideas on fillings! Weirkd gave me a great idea, said to go to Food networks website and search for "Two Brothers' Chocolate Gobs" and it'll give you a recipe by Paula Deen (I LOVE HER!!!!) and it gives you a recipe for cake/cookie as well as the filling for them and it LOOKS like the filling that's in tasty kakes icon_wink.gif

I decided to just use the cherry BC filling because it thickened up nicely and hubby really liked the taste of it and said it would do great together so we did those and delivered them this morning and I told the girl if there was any problem just give me a call and if they wanted more to give me a call to place an order and she smiled and said OK lol

I've found that my whipped frosting is really good for filling. I haven't tried it with cupcakes but this morning, I squeezed some into a doughnut that was plain and boring and it wasn't boring anymore! It was yummy icon_wink.gif
