I went to the local cake store to pick up some Sweetex and foudn it in the cooler? Is there a reason shortening would need to be refrigerated? Should I keep it in the fridge? TIA.

The Sweetex from my cake supply store was always yellow with some transparent spots..... ![]()
That's when I ordered 50# from GFS. It's beautifully white and creamy but way more than I can use in 6 months... So I have 7# in the fridge and the rest in the freezer. ![]()
