Glucose And Glycerin?

I always see these two items with the cake decorating supplies. I read the label but I still don't know exactly what it is used for. Could someone please tell me it's purpose.

I am not sure of all the uses for glycerine but I know you can use it to thin down the Wilton colors when the become too thick. I am also not positive about all the things you can do with glucose but I know it can be used to make fondant.

According to Wilton it is sold as a product to restore icing consistency (glycerin) Glucose is an invert sugar or interfering agent as these are sometimes called it will never return to crystal form its uses are many in fondants as already described, in candy recipes, boiled sugar recipes etc... the two are not interchangeable though.

Both are used in my recipe for making fondant - the recipe is found in any Wilton yearbook. My homemade fondant is FAR superior to their nasty boxed stuff! icon_smile.gif

Glycerine is a clear liquid made from fats and oils. And it is used in fondant to add sheen and keep the texture soft.

Glucose is a kind of invert syrup (sugar syrup) that is used to keeps icing,fondants smooth,shiny, and free from cracking and drying.

glycerine can also be added to royal icing to stop it setting quite so hard

we use invert sugar (trimoline) in pastry school in cookies and things to make them more moist. im not sure if it is the same though.
