What Type Of Frosting Matches W/ Dense/rich Chocolate Cake?

Hi there! I'm NOT looking for a recipe but more a general idea of what kind of frosting would match this cake. It's called a "chocolate fudge brownie" cake made w/dutch process cocoa, and it's dense, rich and insanely flavorful. The first time I made it I tried using a generic butter+p.sugar+milk buttercream, the cake overpowered the frosting. Tried it with a fudge frosting, same problem.
Tastes divine with vanilla IMBC (the vanilla plays perfectly off the chocolate) but I'm making cupcakes and they need to be frosted in chocolate (we're doing three flavors and already have vanilla frosting covered...twice). Any suggestions as to other complementary flavors? Is this the right situation for a ganache? Since it's for cupcakes, does that mean a whipped ganache? Or would ganache be "chocolate overkill"?? I need to be able to put (flat) fondant flowers on the frosting, so a liqueur soak wouldn't work.

Have to say no such thing as Chocolate Overkill, IMHO.
I would do chocolate buttercream with some almond extract added with the vanilla. But I have a high tolerance for super rich chocolate. The cake sounds heavenly, I was wondering if you would share the recipe. ![]()

Thanks for the suggestion of the chocolate bc w/almond extract, I never thought of that. Fortunately the recipe netted me 10 extra cupcakes so I can try it before committing

I too normally have a high tolerance for super rich chocolate - like when they say 'Oh it's so rich you can hardly eat more than one bite' I say "GET ME A SHOVEL!!!"
But this thing is soooo chocolately, that even *I* thought it was better with vanilla! Well also because then you really get to savor the fine taste, as the vanilla doesn't compete. Anyway that's just me waxing poetic about this yummy cake; I'll PM you the recipe - it's not mine, it's from a Scott Woolley Clark book (found it on "egullet.com" listed as the #1 contender for the "best chocolate cake recipe".)

Yum!! I have been having the most insance craving ever since going to Coscto and seeing this huge tub of Tiramasu (?) I have never had it but someone said it has chocolate and coffee ( my fave)!!
Yeah....the $15 was ALOT but then again, that tub weighs 5 lbs. Of course then I would have eaten all 5 lbs. and ended up gaining 10 lbs. so maybe it was good that I passed it up! ![]()
I don't know about you but I think it would make it taste awesome! PB has oils and most BC have butter or crisco......I am thinking I may have to try this.....my whole family are PB junkies.
Hi everyone, thanks so much for the suggestions. I obviously need to think "outside of the box". Peanut butter?? YUM that sounds amazing. As does hazelnut IMBC - ooh yum, would you do that w/frangelico or nutella or...well I can't think of how to pull that off; any advice? As for Kahlua...Oh, my mouth is watering!
In my family, I've learned that when the cake is super chocolatey, they don't care for BC - they say it's too sweet. So I like to frost with whipped cream. I don't know if that would work for your cupcakes or not, maybe use a stabilized wc?
By the way, I am a huge tiramisu freak too! Target sells a small frozen version for around $5 that is pretty good. I used to work at Lidia's KC and their's is FANTASTIC and I am always looking for something comparable. I'll have to try Olive Garden's next!
Oh, you could maybe try a chocolate glaze - I've made one for a chocolate fudge cake and it's yummy. It's from a Kraft foods recipe. Super easy too, even if it sounds a bit yuck:
Melt 6 squares of semisweet with one tub of cool whip in the microwave, and stir. It will look incredibly gross, but stir it well and it will become shiny and sets up nice. I used it on the chocolate cake in my photos.
I agree with those who suggested peanut butter icing. My husabands is a PB/chocolate freak and he gets a dark chocolate cake with PB icing every year for his birthday. All I do is use 1 cup PB, 1cup shortening, 2lbs powdered sugar, milk, and vanilla. It's really yummy and always gets rave reviews!
There's an absolutely wonderful Chocolate Peanut Butter Fudge Frosting recipe on this site. I made it with triple chocolate cake and whipped chocolate ganache filling, and it was almost sinful!!
