I tried to bake cookies for the first time yesterday and I read that you can use the silicone mat to roll it out on to avoid using flour. I did that and it kept sticking to the mat. Should I use spray on the mat or do I have to use flour? Any tips would be appreciated.
Hope I can help and this has been my experience...your dough may be too sticky. Add a teaspoon of flour at a time to get it to the right consistency. I am assuming you are making cutout cookies since you are rolling it out - did you chill the dough prior to rolling it out? I always use the Silpats (silicone mats) and love them because flouring your board MAY cause your dough to get tough as well as working it too much. I always follow the directions (exactly) that Antonia posted in the articles section titled "How to Bake and Decorate Sugar Cookies" and they come out perfect every time.

I made a batch of the no fail sugar cookie recipe this past week and had the same problem. I was frustrated and didn't have much time so I threw the dough in the fridge for a couple of days. I was so upset with the mat that I returned it to the store (and besides which, I had found two others on ebay for cheaper). Anyway, I took the dough out of the fridge last night and added more flour because I had a feeling that that's what it needed. I actually ended up having to add a cup or more of flour when all was said and done. I just sprinkled some on the dough, kneaded it a little, and it was much better ! I could tell just by the feeling of the dough that it was just too sticky. Since I haven't received my other silpat mat yet, I used two pieces of parchment paper and put the dough in between there to roll it out. It worked great! The cookies will come out nice and thin with no sticking. I was up until midnight baking sugar cookies and it was fun instead of frustrating. Yay!

I don't know about anyone else, but whenever I use anything that is silicone, I still have to grease it. I haven't had much luck with them without doing it. One of these days, I will splurge and buy the silpat mats, but they seem so expensive. I've heard people have gotten them off of ebay for a good price, but I haven't been that lucky to find them at a good price yet.

They aren't THAT expensive! Think about what you'll be saving...the grease you keep having to use on those silicone items, time scrubbing cookie trays clean, parchment paper that just goes in the garbage, etc.
They are an investment and can be used over and over and over again. They will pay for themsleves with all the mess you save yourself!
I just purchased 2/Roul Pat mats on E-Bay they are 24x 18 for 50 dollars. I did not use flour on the mat, just on my rolling pin for cookies, as far as fondant I used nothing, just rolled, and I could lift it up and turn it without any problems. These mats have a non-skid on the other side so they do not move while you are rolling, so far, so good. I still use my parchment for baking. I just wanted the mats for rolling stuff.I just used a flat spatula to lift the cookies off the mat, and they did not stick.
I had that problem, too. Then I started chilling All my cookie dough, even when it does not call for it. Solved the problem right away.
FYI to anyone looking for silicone mats -
Closer to the winter holidays, Amazon usually sells the Matfer Exopat Silicone Mats in the half-sheet pan size for around $10. At least they did the past two years. They work just as well as the Silpat, and cost about 1/3 less.
