i am doing a wedding cake that has a pastry filling, lemon filling and a chocolate filling. I am worried about the pastry and chocolate filling. Do they need to refridgerated. they are made out of milk, whipping cream and egg yolks. please help asap.
Real whipped cream will need to be refrigerated, while this can vary (ie gnache) if it is whipped cream with something folded in - then refrigerate.
