i am doing a wedding cake that has a pastry filling, lemon filling and a chocolate filling. I am worried about the pastry and chocolate filling. Do they need to refridgerated. they are made out of milk, whipping cream and egg yolks. please help asap. icon_cry.gif

Real whipped cream will need to be refrigerated, while this can vary (ie gnache) if it is whipped cream with something folded in - then refrigerate.

The filling you describe definitely needs refridgeration.
