Dense Cake?

I just read that for stacking you need a dense cake. I've only stacked one cake and thankfully it was ok. But what would I add to a cake to make it dense? If I am using a boxed cake mix? Thanks

I reccommend the cake mix extender recipe, it is so good and dense. Alos I have have just decreased the oil of a cake mix to 3 tablespoons too. I know some people do pudding but i am not sure of the recipe for that one. Hope I have helped. icon_smile.gif

Some box cakes are denser than others - so if you don't want to experiment with every kind icon_smile.gif... pudding does help - you should be able to just add a box of instant pudding into the mix. I've done that before and you get more of a bundt cake consistency. How many layers are you stacking?

i have tried the super enhanced cake recipe from here and i loved it, i will never go back to using just a box mix.

I was going to do four tiers I did three before with just regular mix and they didn't fall or anything. but I was reading a post that said tiers can crack or lean.

I do tiered cakes often and usually just use a doctored cake mix - but nothing extraordinary. As long as you use good support it should be fine.

I have used anything from pound cake to a moist soft butter cake recipe. I've started using the Wilton plastic dowels. In theory, the cake should be resting on the dowels and not the cake itself. Dense probably is the prefered way to go, but especially if it's not a large stacked cake, just dowel it properly and you should be okay. Have fun!
