Eggs Not Turning A Lemon Color..

My recipe says to mix the eggs until thick and lemon in color. I have a KA 6qt. 11 minutes later (recipe says 3 minutes) they are still egg yellow, runny & slighty foamy. I started it on 3 after 8 minutes I reduced speed to 2. Please tell me what I'm doing wrong!!!!!!

Maybe the recipe is suppose to say beat the eggs AND THE SUGAR until thick and lemon colour.

and how many eggs??

a 6qt KA doesn't handle one or two eggs very well....need to be in the 4 to 6 egg range.

and ditto on the sugar comment.

(may have to break out ::gasp -- the horror:: hand mixer!)

It was for 3 eggs. I threw out the first eggs 23 minutes and still no color change or thickening. Actually the recipe tells you to add the sugar mixture to the flour and sift. I also did not use the whisk attachment! icon_redface.gif I always forget about that!
