I have a friend who had strawberry lemonade cupcakesvat a bridal shower. I'd like to make some. I've thought of taking a lemon cake and adding some chopped frozen strawberries and lemonade concentrate (maybe strawberry lemonade concentrate if I can find it) as subsitute for the water. I usually use the pudding/extra egg/double oil enchancer. If I wanted to sub strawberry jello for more strawberry taste, should I leave out the pudding? I'll probably make a cream cheese icing with a little lemon juice for tartness/taste. Any done this? Ideas or recipes? Thanks!

Hmm, I'm not sure about the jello or pudding.. I just wanted to give you a bump and an idea... What aboout making a lemon cake and replacing some if not allof the liquid with strawberry juice/nectar...or whatever they call it.. I'm not sure if it will give you the flavor that you're looking for.. but it's an idea... anytime I think of lemonade.. i think of a tart taste...that's how I like it ...
i don't think subbing jello for pudding would work, but after you bake the cake you can poke holes in it and pour strawberry jello liquid over it...make a jello poke cake!
also, smuckers has a strawberry lemonade powder maybe you could make a couple cups of that and replace the water in the recipe with strawberry lemonade
I think I saw something like this on the food network recently. Sandra Lee subbed water with frozen lemonade concentrate in a cake she made... I think...

This is a recipe link for a Lemonade Layer Cake posted by someone on the Scratch Bakers thread.
You can probably use your idea of using a strawberry lemonade concentrate in this recipe or replace some of the sugar in the recipe with the dry jello powder packet (just scale to know how much to replace).
