Decorating Cookies On The Fly

I am by no means an expert on cookies and since my main business is cakes I always end up leaving my cookie orders for last and I'm always stressing on doing them.

I have come up with my own little...time cutting tips, and I'm sure that you've probably seen them before, like I said, I'm not a cookie expert..

but here goes...

I do have a do-board and roll my cookie dough between 2 sheets of parchment paper, then I keep one of the sheets to become the bottom of the next batch.

I place the rolled out dough onto a cookie sheet and when I have several stacks I place them in the freezer.

Then make another batch of cookie dough. While this second batch is chilling in the fridge, I pull out the first rolled out batch from the freezer and cut my cookies out. I throw them in the freezer again, until I have all my cookies cut out.

I then place them on the cookie sheet that will bake them. I line the cookie sheet with more parchment. (dont 'worry I recycle..lol) to keep the cookie sheet clean and ready for the next batch to bake.

While my cookies bake, I have my fondant, MMF tinted and rolled out, ready to cut with the cookie cutters I used to make cookies, I have several small bottles with tips filled with colored chocolate that I have melted. you can use a heating pad to keep your bottles on or you can put them in the microwave to remelt, whatever works for you.

I have a "COOKIE GLUE" that I make....sifted powdered sugar, a little extract and some melted butter, just to make a sort of wet paste...like "wallpaper glue consistency ) I eighter brush this onto the cookies or use a glove and smear it on the cookies ( when they are large cookies I use this method )

I put the fondant cut out onto the cookie that has my cookie glue on it and put it aside, when they are all done, I airbrush them...add details with my melted chocolate and give them a little border with the chocolate.

I find this "ON THE FLY" method quick and easy for me, as I have everything I need already set up!

My first hour is spent making the dough, chiling it and rolling it out.

next hour is spent decorating!

So, in 1/2 a day I can get several dozen done and out the door.

and when I use my edible images, even BETTER!!!!!!!

Thanks so much for your great tips! I'm just getting started to decorate cookies and I'm always looking for tips. What is your favorite sugar cookie recipe?
