Making Cookies In Advance

I have a wedding on October 7th, and in addition to the wedding cake and groom's cake, the bride called, and wants 60 wedding cake favor cookies bagged. How far in advance can I make these? Since the wedding is next week, do you think that the cookies would still be nice and fresh if I start on these this weekend? Keep in mind, they will be bagged, and free from air drying them. They will be iced...not sure if that would make a difference with the freshness or not.

When I make cookies in advance I make sure they're really crisp by cooking them in the oven normally and then have them resting on top of the hot oven for ten minutes or so afterwards, then they're really crips and unlikely to go bendy. I do this a week or so in advance and have never had a problem. Think of all the cookies people hang on Christmas Trees - they'r edible for ages!

I make mine a week in advance, not crispy, and they are always fresh. I think you will be totally fine baking them this weekend.
