I'm a newbie to all this and I tried the rolled buttercream recipe tonight. I didn't care for the flavor and it kept tearing when I covered my cake. I was planning on using either MMF or the Easy MMF recipe next time. Which flavor do you like better? Which is easier to work with?

Thanks,
Kathi

I made MMF for the first time last week... I learned a few things while doing so that'll i'll pass along... lol
1. sift the powdered sugar...

2. grease hands and grease them WELL!! (next time i think i'll go to my elbows) icon_smile.gif)

3. lift weights at LEAST a week before attempting to make sure im in good shape for all the kneading...

4. when i think i've added enuff powdered sugar, that's when it'll get sticky again icon_smile.gif)

I know there was more, but i've forgotten.. when i make it again im sure it'll all come back to me!

but the flavor was GREAT!! tastes like a circus peanut!!!!

I used MMF for the first time a few weeks ago and had no problems at all.

I didn't add in all the powdered sugar that's called for in the recipe. And I found that greasing the countertop worked a whole lot better than using corn starch. icon_wink.gif

ITA sift the sugar! Makes a BIG difference. If you have a KA--use the dough hook and let it do the work(kneading) for you.

Also, A benchscraper can be great! It can really help save things if they do stick--esp great when cutting out shapes for cookies and such. I hve the Graham Kerr Bash and Chop.

I have read a long piece of pvc/plastic pipe you can get at the hardware/Lowes/Home Depot is also great for rolling it out--yoiu can get it any length vs standard rolling pin size.

I have only used MMF in the short time I have been using fondant.

mmf is super easy to do.... i use the marshmallow recipe where you melt them in the microwave w/2tbl of water and keep stirring every 20 seconds.. I made a batch last night and it came out perfect. I for some reason am able to use the whole bag of confectionery sugar. I just pour the whole bag on my mmf plastic mat, then make a well in the middle. When the mm are ready, I pour them into the well of the sugar. That's when I grease up my hands. I also have a 1/4cup of water on hand and 1 cup of extra shortening for when I'm going along and the mmf needs moisture or your hands need to be greased up again.

I can get a good ball of mmf done in 8-10 minutes.

good luck...
