I have a probably stupid question about what is vegan and what is not. Please understand that I know very little about being vegan. From what little I know, I guess there are different degrees of being a vegeterian is that the samething as vegan? Like some people don't eat any animals or products that are derived from animals and others don't eat animals but will eat products that come from animal - like they woudn't eat eggs, buit they would eat cheese. Is this correct???

The reason I want to know is I made the vegan chocolate cake recipe on this website and it was absolutely delicious. I frosted it with buttercream - I used crisco which is 100% vegetable lard for the frosting. I also put ganache on it, then I started thinking that I may have messed up with the ganache, that the cake would no longer be vegan with the cream. I also put chocolate covered strawberries. The cake was delicious.

Anyway, I want to be able to offer this type of cake to my customers, but I don't want to sound like an idiot either about what is vegan and what is not, so if someone could enlighten me a little bit I would really appreciate it.

If I can figure out how to attach a picture of the cake I will.

Ok, hopefully it will work this time.... I had to resize my picture to make it less than 800x800 pixels.

A vegan cake would have no animal products at all in it.

No cream, possibly no chocolate, if it has any milk or milk-derived products. No eggs, no meringue powder, and even honey isn't eaten by some vegans.

Also, just a technicality, but "lard" is the term for rendered pork fat. Crisco is 100% vegetable shortening, but is not lard nor does it contain lard. Anything that does contain real lard would also not be vegan.

Hi Susan,

Vegan foods means theres no any sort or type of dairy products on it, while Vegetarians has many "kinds" like ovu vegetarian which doesnt eat meat but eat eggs and lacto vegetarian who doesnt eat any meat at all but does consume dairy products and i belong to this kind for almost 20 yrs..So hopes this helpsicon_surprised.gif)

if your chocolate has milk solids, your cake is no longer "VEGAN".

There are different degrees of VEGETARIANS.

Some people just don't eat red meat

some don't eat any meat but will eat fish and or chicken.

Some will not eat anything with a face or mother that has to die to provide us with flesh.

but they will do dairy and eggs.

then there is the PURE VEGAN that will NOT eat ANY product derrived from an animal, flesh , eggs , milk of any kind.

Then there is the MACROBIOTIC VEGETARIAN...that's a WHOLE 'nother animal altogether..lol

for the chocolate you're going to want to substitute...karob....from what I understand it's not a bad substitution!! Who knows, I love meat and dairy! I wish I could be strong enough to be veagan.......I've never seen an overweight vegan!!

Also true vegans wont have powdered sugar. I was told that powdered sugar is processed with carbon which will have animal remains. There are also types of flour which are suitable because of how they are processed.
Some very strict vegans, will not eat anything that doesnt come out of a vegan kitchen, so although im a vegetarian, i wouldnt be able to provide true vegan items for sale.
I think the best is to provide a list of ingredients and then let your customers make up their minds.

oh no..hahahah...you've never met me! There IS no meat in a bag of potato chips! icon_redface.gif

and I LOVED salad dressing!!! woo hoo

( I lost the weight, 18 months of hard work, diet and obsessively going to the gym!! but culinary school was my undoing...trying to get back into my dicipline!)

lol......I told my hubby to forget all the diets.....we need to become vegans or at least vegetarians........I would probably find a way to be fat without eating anything but vegetables too lol!!!! I guess french fries would be ok to eat right?? So yeah I guess maybe I would still be fat LOL Although I don't eat many of them now....not any fried ones anyhow. But if I couldn't have meat I'm sure I would be hittin the french fries lol

I havent met many vegans myself, im a vegetarian (no fish, chicken, beef, gelatine, lamb etc) i have milk and eggs, otherwise i'd miss out on so many cakes!!
and if you saw me, you'd see, i havent missed out on ANY cake
hahahahahahahaha

if you've got a vegan customer, one good bet is to find a health food or vegan store in your area. When I lived in Toronto, vegan flour and other baking products weren't hard to come by... there are also lots of places you can order from off the net.

actually, you do find some fat vegetarians. I knew girls in college who ate nothing but pasta, chips, potatos, etc. Just b/c you aren't eating meat doesn't mean you have a healthy diet. and eating meat isn't UNHEALTHY - to each his/her own.

Some vegetarians dont stop eating meat because of health issues but because of personal ethical/spiritual issues.
I eat a LOT of veggies, but I can never go past a nice piece of cake ; )
therefore im as far from being slim as anyone can be ; )

You can, but i dont have a recipe. Recently a friend of mine had to make a dairy and egg free chocolate cake because of allergies and she made the ganache using soy milk.

I've been vegetarian for over 5 years and became vegan 3 years ago. And have only gained weight haha. Lots of pasta, breads, morning star sausages and chik'n nuggets, ribs, hot dogs, tacos, chili, macoroni and cheese, pizza munchies, deli meats, cheese, ice-cream sandwhich's. There are alternatives and replacements for everything. Lots of things are vegan that suprise people. Oreos and soy milk YUM! Light Blue Bonnet butter is vegan. And if i remember correctly Sams club/walmart brand chocolate chips are vegan. Non of that Karob for me! most vegans will eat confectioners sugar. If you go to stores like Whole Foods they have alot of options, and Egg replacer. Vegans vary, I always ate honey and sugar. Recently though i've been more vegetarian than vegan. I still prefer soy milks and cheeses, but have started eating m&ms and using eggs and stuff in my cakes.

Vegan - No eggs, milk, cream, egg powder, no ANYTHING that comes from an animal. Alot of dark chocolate is vegan. Remember chocolate does not come from an animal, Milk in the chocolate does. (milk is also added to alot of dark chocolates and such also) but you can usually easily find vegan chocolate.

thanks everyone for the information. It is a really complicated subject!

I will have to try that vegan ganache some time. And I will do more research if I do decide to offer this type of cake. Obviously I am not going to offer vegan kitchen, so if that is important they will have to go somewhere else.

What makes chocolate, I mean a good quality chocolate like callebaut, not be vegan or vegetarian? I wouldn't have thought it had any animal products in it, or dairy.

The vegan chocolate cake recipe on this website calls for flour, so if I am using just regular flour, does that make it no longer vegan?

Also it calls for coacoa powder? I used hersheys coacoa powder. Is that not vegan?

Thanks again for the information. It is really helpful.

That's the problem with my cake - I used cream in the ganache, so its no vegan anymore, but jmt1714 posted this link to a vegan ganache, that uses soy milk or rice milk.
