Well I had my final class last night for Wilton Course 1. We are in the process now of trying to locate somewhere doing Course 2 in October-- most places Ive called are doing either course 1 or 3.... so hopefully I can find some where.

I had a heck of a time with the roses... it didnt help that our class rooms air conditioning has been broken (All Month), so no matter how stiff we make our BC, it gets too soft (Arizona-- That should explain it hehehe).... so I made a good stiff BC, but the bases started melting and getting too soft, so the petals sagged most of it down. I need to practice some more at home in a nice cool place with access to a fridge/freezer.

I think for the heat, and the first time making roses I didn't do too bad.

So anyway here goes my final cake:

Well done! I have been baking cakes for fun for a while now, and I have finally decided to take a class...no Wilton classes are offered here, but one of the local bakers has classes. I hate to start with a beginner decorating class...but I'm sure it'll be fun.

Thanks everyone!

I know my swiss dots need work, we were in a bit of a rush so I didnt have time to get rid of all my "tails" LOL... and not enough time to be careful enough to avoid them.

I am very excited to start Course 2 !!!!!!!!!!

I'm in Arizona too, but my instructor was awful. She didn't even show up to teach the second class of course two. I asked for a refund, but they want me to sign up for another class instead.

If your having trouble with the rose bases melting, use the Hershey kisses. Many people swear by them...

The melting came from the 85F+ room LOL

Im gonna try them at home, in a nice 74F or so and see how it does...

It seems like the hersheys kisses would be too small though? Are they not?... That and Im not allowed chocolate in my house LOL

If you think the kisses are too small, it might be that you are making your bases too large.
I checked my Course 1 book. It says that they should be 1 1/2 times the height of your tip opening.

I think your cake looks wonderful! The centers look really nice! And the ones you think look melted actually look like they are supposed to lean that way! Your frosting is very smooth too. Overall, you did an excellent job! You'll love the weather when we're buried in 6 feet of snow! Good luck with II. I'm sure you'll find it somewhere!

Well no Course 2 for me. Ive called 6 different Michaels, and the Joanns that does them... No one is doing course 2, they are all either doing Course 1 or 3... ARGHHHHHHHHHHHHHHHHH

So I guess I have to wait until November.

I think October I might make a cake a week like I would in class, and pick a new technique to teach myself from an online tutorial or something.... I need to learn basketweave, I was hoping to have course 2 in opctober to learn cause I need a basketweave cake late October... I guess I need to teach myself.
