Refrigerate Or Not?

I have been reading through a lot of threads about chocolate dipped strawberries and I know some people say they refrigerate and some people say they leave them at room temperature. I dipped my strawberries this morning in white chocolate and then placed them on a wax paper lined cookie sheet that had been chilled in the refrigerator. I packaged them in mini cake liners in a Tupperware container. My office building stays pretty cool throughout the day. Will the strawberries be fine staying out or do I need to refrigerate them until they are to be picked up? I am worried that if I don't make the right decision they will start weeping. Thanks in advance.

I would put them in the fridge, since you already had them in the fridge.. No matter what I am fruit in the fridge kind of gal I think it keeps it looking nicer and it will keep the choc. from sweating.

I agree, I would keep them in the fridge. I just think that strawberries need to be in the fridge after they've been washed. It will help to keep the chocolate hard, too!

I think they will be fine at cool room temperature. Refrigerating them will cause some sweating when brought out to room temp, but the weeping is caused by berries reacting to sugar in the chocolate ~ and will happen in time whether you fridge them or not.

Personal Opinion.. Cold dipped strawberries taste sooooooooo much better VS room temperature dipped strawberries.. I did this once, for trial.. I placed some dipped strawberries in the fridge all night.. and then took them out the next morning.. to see what they did after sweating.. They were fine.. They didnt look as pretty.. But they were ok..

Thanks for your replies. I will put them in the refrigerator and tell the person I am giving them to that they will be best if eaten today.
