Cool Whip?

okay, so the cake I'm working on for this weekend (and it's slow going cause I didn't prep at all icon_sad.gif ) , is for my mom, whose favorite kind of cake is the good ol' fashioned coconut cake - yellow cake with coconut shavings in the frosting.

What I'm wondering is this - a large part of the cake will be "grass" - perfect for green-tinted coconut. But, I am very curious about using something like Cool Whip as the base icing for this part. the other large piece of the cake is going to get fondant.

Anybody used cool whip as an icing? Anybody used it for a coconut cake?? Can one buy a couple drops of coconut extract to flavor the whip?

I really am not very experienced and don't know about using Cool Whip, but I am almost positive I have seen coconut flavoring in the grocery store where they sell the vanilla and other flavorings. Coconut flavored Cool Whip sounds delicious to me! icon_biggrin.gif
