I may be making a cheesecake for a co-worker's birthday next week. I thought of a plain or flavored cheesecake coated in chocolate ganache. And then I thought against it because I'm always doing chocolate and I want to do something interesting and challenging. I search the nestles and kraft website and they're all variations on a theme--berries, citrus, chocolate, peanut butter, oreos, etc. I would like to 'frost' the cheesecake. Could I do that with buttercream? Or maybe a cream cheese frosting icon_smile.gif
I'm open to all ideas no matter how wild or outrageous. I'm looking for something different yet good and with as little chocolate as possible. And preferably something I can frost or top with whip cream.

I make a strawberries n cream cheesecake that my customers really like. I top it with a mixture of sour cream and sugar. Yes, I said sour cream and sugar....you take 8oz of sour cream and mix with about 1/4c of granulated sugar (or to taste...I like it pretty sweet), mix it fast so the sugar blends in and isn't grainy. I spread it all over the top and add slices of strawberries to make it look pretty and it is really good. thumbs_up.gif

I have a recipe for a butterscotch cheesecake topped with whipped cream,or a caramel-apple sundae cheesecake topped with caramel and pecans if you want them.

I make an apple praline cheesecake that is very nice for this time of year. It is really good with whipped cream so you could frost it with cream.

here is the recipe.

~~~Olive Garden Apple Praline Cheesecake ~~~~


CRUST

1 cup Graham cracker crumbs { I use gingerbread cookie crumbs instead}

2 tablespoons Sugar

2 tablespoons Butter

APPLE MIX

1/4 cup Butter

1/2 cup Light brown sugar

2 pounds apples; peeled -- cored, dice 1/2" pcs { I like a firm apple for this}

1 teaspoon Cinnamon

1/2 teaspoon Nutmeg

1/2 teaspoon Allspice

PRALINE TOPPING

1 1/2 cups Dark brown sugar

1/2 cup Butter -- softened

1 cup Pecan pieces

APPLE CHEESECAKE

16 ounces Cream cheese -- softened

1/2 cup Granulated sugar

3 large Eggs

1 cup Heavy whipping cream


CRUST-Melt butter. Stir in the crumbs and sugar until thoroughly blended. Press into the bottom of a 9" springform pan. Set aside.

APPLE MIX-In a Dutch oven, melt butter over low heat, add brown sugar, apples, cinnamon, nutmeg and allspice. Simmer over low heat until apples are soft, but still hold their shape. Cool mixture to room temperature and reserve.

TOPPING-In a small bowl, mix all ingredients together with a fork until well incorporated. Reserve.

CHEESECAKE-In a large bowl with an electric mixer cream together sugar and cream cheese on medium speed until light and fluffy.

Beat in the eggs one at a time until smooth. Add the cream and continue beating until the mixture is thick and creamy. Gently stir in the cooled apple mix by hand. Pour into the prepared spring form pan. Spread praline topping over the top. Bake at 350~ for 1 hour and 20 minutes. Allow to cool to room temperature before removing the sides of the pan.Refrigerate until ready to serve. Garnish with whipped cream.
