The Notter School of Pastry Arts is in Orlando and they have 2 classes coming up in November:
Beginner Gum Paste Flowers and Advanced Gum Paste Flowers
The instructor, Sue McMahon, is from England and is internationally renowned for her gum paste flowers.
If I worked and lived in the area, I'd consider this a great opportunity.

Wow....I would like a gumpaste class in my area. Anyone know of anything in the greater Detroit area?
In the greater Detroit area, Dianne Gruenberg teaches gum paste flowers using the "original soft method"--different from the Wilton method, but it produces wonderful flowers. She's delightful and a great teacher.
She owns Avenues Wedding Choices Etc., Inc., Saginaw, Bay City, Midland, 989-667-4511 and she's in the process of opening a cake decorating school. I believe that she does lessons all over the country.
I'm sure if you give her/her shop a call, she can give you all kinds of info.

I don't know of anyone right in Sacramento--I'm familiar with a few in the San Diego area.
Perhaps if you contact the CA Cake Club, they could recommend someone.
