Do you think my cake still taste fresh on Sat. if I bake it tonight? I planned on baking it tonight, wrapping in plastic wrap & keeping it in the fridge until I'm ready to decorate it on Fri. I just don't want it to dry out. Do you think this will work? Thanks!

What do you think of freezing your cake ???

I could freeze it if that way is better. I usually bake the night before but this time I have to do it earlier. I just wasn't sure which way would keep it tasting fresh longer.

I would freeze it if I were you. If you wrap it as you had said as soon as it cools a little (but is still a little warm) and then freeze it, it will be really moist. I always freeze my cakes the day before I'm going to decorate them for this reason (and because they're easier to frost when they're frozen)-- Good luck!!
