My daughter and I just made this yesterday and I've eaten half the cake already! By myself! icon_redface.gif What can I say it's stinking good. Here it is:

Peanut Butter Filling
Makes enough to fill a double layer 8" tier three times

1/3 cup butter or margarine
1 2/3 cup REESE'S Peanut Butter chips
1/2 cup sugar
12 mini REESE cups, cut into squares

Melt the butter and Reese's chips in a microwave safe bowl for 1 minute in the microwave.

Stir to combine and add the sugar. Stir in sugar completely.

Let the mixture cool slightly and fold in the REESE cup pieces.

Welcome to CC, KathyF23! icon_smile.gif

I tried the following peanut butter filling/icing recipe a couple weeks ago, and it was honestly one of the most amazing things I've ever tasted. Super peanut buttery, very smooth, not too sweet, just perfect. It's from Ina Garten (Barefoot Contessa on the Food Network). I iced and filled a 2-layer 8" round chocolate cake with it, and I tripled the recipe. I had about 1.5 cups of icing/filling left over. It keeps for quite awhile in the fridge. icon_smile.gif

Kathleen's Peanut Butter Icing

1 cup confectioners' sugar
1 cup creamy peanut butter
5 tablespoons unsalted butter, at room temperature
3/4 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup heavy cream

Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.
