I Need Help With What To Charge For A Topsy Turvy Cake

Ok, so the cake needs to serve 60 people, its a 2 level stacked topsy turvy. Its for a big party in seattle at the W hotel, and I really need this. Its for a mans 40th birthday party, she wants a big funky '40' on the top of the cake. And little curly cues sticking out in bunches on the sides. Id post a pic but i dont have one on the computer.
So, i told her 2.60 a serving (that would be 150.00) with basic buttercream, filling, and cake flavor. But she wanted to make it fancy, so im doing a white chocolate flavored cake, choc. ganache filling, and french b.c. frosting, plus its covered in fondant. And i have to deliver. So i told her id get back to her tomarrow for another quote.
I am thinking of charging her about $3.30 per serving , and including the delivery fee that would be about 223.00. My HUBBY on the other hand thinks im undercharging, he always thinks that. He thinks more like 275.00.
So im asking you , please help me!!
So much work...I would side with DH---or maybe split the difference.
