Tomorrow is my final class in Course III and I have to make a tiered cake. The good part...I have the cake pans I need icon_biggrin.gif The not so good part...I can't figure out what type of cake to make...I have 4 lonely cake mixes up in my cabinet, and of course they are each a different flavour, and wouldn't be good mixed together. Of course I also don't have anyway to "extend" any of my cake mixes either. I guess I can always wake up super early in the AM and go to our commissary for a cake mix, to match up to one...but really wanted to try a "from scratch" cake.

I have spent HOURS looking for recipes on line, and haven't seen any that I want to try - I don't want to risk it not turning out good, and then not having the time to re-make another cake. I had someone post a cake recipe earlier that sounded good...then I discovered I didn't have some of the ingredients. icon_sad.gif

I need to have a good sob fest. icon_cry.gif

I have that cake coming up in less than 2 weeks...still not sure what I am going to do either....good luck and hey dont stress out....its just a class cake!

I think you need some chocolate. Things will look much brighter after that!! icon_lol.gif

Just remember that you are going to do just fine! Go ahead and try a scratch cake next time. Use those mixes up while you're in a time crunch, then you can play with the scratch stuff when you are done with classes and have a little more time, and ingredients! Good luck!

Sorry you're feeling stressed. For my course III final, I only had 2 non matching mixes as well, lol. I made the top 6" tier chocolate, and the 10" bottom white cake. No extender needed as I just did single layers of each. I had camera trouble so no photo, though.

I was more terrified of covering them in fondant! icon_surprised.gif

I agree with Melvira, don't add to your stress by trying to make a from scratch cake (for the first time?) while worrying about your first tiered cake.

Save the from-scratch for a time when you aren't under such pressure!

Am I right in assuming you were going to need more than one mix for each tier? That is the problem? I think if that was the case, and I couldnt run out and get a few more mixes tonight, that I would try and do it in the a.m.

I feel your pain...

I'm due for carpel tunnel surgery tomorrow on my dominant hand. Friday is the end of the fiscal year at work and of course there is a ton of last minute spending being done (ie: tons of work for me). I have another project going to pilot testing on Monday. I've worked at least 11 hours the last 2 days and will do it again today.

On top of that at home, I need to make a cake for my husband's club meeting at our house on Wednesday and 6-8 pies for a delivery on Saturday.

I've recruited a friend to help me with the pies as I can't see rolling very well with a banged up hand.

I say dark choc covered espresso beans for everyone!!!!

I'm with another one who said "it's only a class cake". So what if it doesn't match? Do you eat it in class? No! Go with what you have and tinker around later! From what I hear, it's all in the decorations for that class anyway. I'm only on Wilton II. I'll stress about III later! Also, with that chocolate that was recommended to you, have a little 'flavoring' to go with it!

I agree, IMHO the Wilton class cakes are all about the decorations, technically you don't need a "real" cake anyway, you don't eat it class. Relax and enjoy your last class. Use what you have on hand, who knows you may discover a new combination!

I am an WMI and I won't let my girls stress over that either. Just do different flavors for each. I have had some girls just bring in one layer. As that is all that they had money for. It is about the over all look. Not an actual wedding cake. Go and have fun. icon_biggrin.gif

While your cakes may not be the same, they may just compliment each other nicely! Go with what you have and good luck with your final cake. Mine is due next week and I'm still planning it out in my head - well, obsessing is more like it!

Who says you can't have a cake with different flavored layers? I recently made my birthday cake with two tiers. Each tier had one layer white and one layer lemon...it was yummy. I'm sure you will be fine. Don't stress about it too much. As has been said it is just a class.
