I recently got a request for carrot cake. I have never made one before so I have been doing a lot of searching. I found a recipe that has both the baby food and grated carrots in it but it also calls for 1 cup of coconut.
My question is do any of you think that this is an odd ingredient? and if I decide to not add it do you think it will affect the cake?

I'm not sure if this will help but this is a family recipe and it is amazing. It calls for:
4 eggs
2 cups of sugar
1 1/2 cups oil
1 small can of crushed pineapples, drained
3 cups shredded carrots
You mix all those together and put aside, then mix seperately
2 cups flour
2 ts baking soda
3/4 ts cinnamon
1/4 ts salt
Sift together and then add wet ingredients plus 1/2 ts vanilla extract. Bake at 30-40 minutes at 325.
For the icing I use a package of cream cheese and 1/4 cup of butter. Misx well and add a pound of powdered sugar and a ts of vanilla. Mix and add a cup of chopped pecans. This is very good and moist. Hope you enjoy.
