I have some leftover cake mix how can I say this to use at a later day and how long will it be good

I use mine within 2 days-or else make a small cake and wrap it well and freeze it for a little dessert, smash cake, etc.

If is already mixed -batter, go ahead and bake it and freeze it for later. It will not keep. If it is dry mix, just seal it up and use later.

I make cupcakes or small cakes with the extra batter.

This is what I do, also.

I do this so often, in fact, that when my birthday came last week, my hubby just took a cake out the freezer and decorated it with the kids for me. icon_lol.gif

I always just make the little 2x6" loaf pans, then I freeze them and use them for cake tastings. I've never kept batter for more than a day with the raw eggs in it it makes me nervous...
