I want to do a cake that has a race track cake and I was wondering how do I make a smooth race track on top and still ice the rest of the cake. Should I just do the entire top of the cake in black and then cover up the extra space with another frosting (like using the grass tip)? Any tips or suggestions would be appreciated. Thanks.

Sounds failry good except the chance of the icing tasting funky cause of all the color. Maybe you could do the track in gum paste, let it dry completely and then place it on top of the cake.

I did one for my FIL with a friend of mine a few months ago. What we did was used the star tip to make a checkered cake and we put a "track" on top of it with fondant and made some fondant race cars to put on the track. Here is a pic. HTH. By the way, my FIL's nickname is "Sweetroll" hence the "Sweetroll 500".

Thanks for the suggestions. Do you think just regular chocolate fondant would work, or should I color the fondant black?

Or if you don't want to use fondant, you could use black icing (choc. icing tinted black) draw it on the cake and use a hot offset spatula to smooth it out. Just another idea.

I just piped black icing with the big tip that's made to ice a cake......I just turned it over so the grooved side was down and the smooth side was up and squeezed the black icing out.

If you use a crusting bc you could ice the cake and mask off the outside and inside of the track with wax paper cut in "stencil" of race track so you could frost the track. Hope that makes sense!
