Just a quick question - is your icing too warm? Almost every time I mess up roses it is because the icing is not thick enough. If it is hot where you are or too runny, either throw the bag in the fridge or squeeze it out and add a bit more sugar.....

Oh yeah, or in the opposite, is your icing too stiff? That causes problems too.
yeah, it would help if we knew what the roses looked like...........if you're getting cracks on the edges of the petals you might add a tsp. of piping gel per cup or so of icing........you need a stiff consistency but sometimes it can look dry when it's the stiffness necessary for roses....so the piping gel can really help with that.
If all else fail..do Fondant roses...out of Wiltons ready made Fondant.
IMHO...I think with piped roses, you run into more issues that Fondant.![]()
