Decorating German Chocolate Cake?

My dh loves german chocolate cake with the coconut pecan icing. My question is how can I decorate a cake like this? The coconut pecan frosting is so ugly! He has to be difficult! lol

I am going to be making a german choc cake for my brother in November and am planning to use the icky coconut icing (hehe) as filling and decorating with chocolate fondant. I'll probably do a 2 tier stacked cake.

I usually use a choc icing for the borders and add hand made choc pieces to the top of it. If I need to write on the cake I will make a piece of choc in a square or triangle and write on that. Hope this helps. If you look in my pics there is a choc cake with the hand made pieces- may give you ideas good luck

I made one for my neighbor for his 40th birthday. I did 3 layers - all edged (a dam) in chocolate icing, filled with the coconut pecan.

I did not frost the sides of the cake - but left them with the chocolate icing peeking out. I then did shell borders on the top and bottom. And I put a fleur de lis (3 shells basically) on the top of the cake. It looked great, like it came from a chi chi bakery. And he pretty much ate the whole thing himself. LOLOL

Keep it simple. Don't over think it. He's after the taste here, not so much the decoration. I like the idea of the chocolate piece on top. Just something different.

If my neighbor has a picture, I'll try and post one.

or, make the cake traditionally, and then use chocolate buttercream to pipe decorations (borders, writing, etc).

Hi - I also had a german choc cake decorating dilemna and they wanted flowers on the cake for a guy, so I just frosted it with choc. frosting, spread the coconut/pecan frosting on top and made blue roses and the borders were in choc. also. It actually looked pretty good. Dana

I've been doing so many practice cakes, lately and my dh's fav. is german choc. I promised him I'd make it for him this week, but I want to try royal icing flowers. My plan is to make 2 8" rounds, tort both, fill with yucky pecan coconut stuff, then cover in bc and fondant with my RI flowers. Not sure how the bc will taste with german choc cake, but I'll find out in a few days. I'll take the risk since it's just for my husband, and I'll still have a pretty cake to add to my pics. icon_biggrin.gif

OOOH, I almost forgot! I'm also gonna make German Choc cake truffles with the scraps and roll them in coconut!!!!!!!! My dh is foaming at the mouth!!!!!!!!!!1 icon_biggrin.gif

I just did a grooms cake that was German chocolate. I filled and iced the sides with the coconute pecan frosting then piped a rope border and iced the top with chocolate buttercream. I also put chocolate curls on top of that but you could easily pipe a message or put flowers or something on top of the chocolate buttercream.

I always do three layers with the pecan/coconut filling between each and on top. I do not ice the side. I then drizzle ganache around the top edge, leaving the filling showing on the middle of the top, and letting it run down the sides.

When I make these usually for a guy, I make choc buttercream roses, and then use the deep dark chocolate for the leaves and the borders. Sometimes I will use the lighter choc piped over the darker chocolate. They have always turned out fine.

I made one for my son inlaws birthday because German Chocolate is his favorite. I used Piroline cookie on the sides, tied it with a ribbon and bow and used silk flowers.

I don't have a pic that I can find at the moment, but I just put royal icing flowers on the coconut pecan icing with some leaves in BC. I like the post about the ganache, though. My FIL would like that one!
