I've seen some other posts mentioning a "paper towel method" for smoothing buttercream. How does it work?

Look under articles for the "Viva method" or better yet - do a search for VIVA - you will get a bunch of great threads to read - read them all!

I use a meringue-based buttercream. Will it not crust enough for this method?

Can't help - did you search - it was talked about just this weekend - about recipes and what works & don't. I use "regular BC", sorry.

I personally use typing paper to smooth my cakes. After the frosting has crusted alittle put a piece of typing paper on top and smooth with your hand. But check out the thread I share because I care. She tells how you can use a foam roller to get your BC smooth. If that is what you want. I hope this helps icon_biggrin.gif

Thanks! I've been getting alot of requests for 3-D cakes lately, but the customers don't want to pay extra for fondant covering (or they think kids won't like the taste). So, I have to frost (in buttercream) these shapes that are impossible to smooth!--I need every trick I can get!
