Fondant - Very Sticky... Got A Remedy??

I posted over the weekend that I made 'regular' fondant (Toba Garrett's recipe) and it came together beautifully and I was very happy with my 1st end result.

I went to color some of the fondant (after letting it rest 24 hours) and I was working the gel color into it and it became very sticky again! Should I try to knead in more sugar (the fondant was made on Friday and stored in the fridge) or should I knead in the color with greased gloves??

Can anyone help?? I was so happy on Friday and discouraged again. I don't want to waste what I made. I just want to make it workable!!

I would knead in more powdered sugar and also some shortening. It should come out fine!!!

Here's what I would do:

First, make sure that your fondant has at least a tablespoon of shortening and a teaspoon of corn syrup in it, at the start, when you put the water marshmellows in the microwave. And for a quick "cure" now, dust it with some cornstarch or a little powdered sugar. I use cornstarch. It's not sticky on sticky, and it helps to keep it from sticking to the counter too.

Fondant tends to be less pliable if you put it in the fridge. I don't worry about that if I'm going to be using it right away, say in a day or two. Otherwise you can fridge it. It'll actually keep just fine in a ziplock bag or air tight container, in a cool pantry or cupboard for about 2 weeks just fine.

The color adding might be the issue too. If you are using a gel colorant, you've got to add an equal amount of powdered sugar to it. And the knead like crazy. If you want a more solid color over all, add it to the water mixture at the beginning.

Also, give one of the great MMF recipes a try that are posted on the CC, I've got mine here too. I've never gone wrong with them yet!

Adding color adds more liquid and can cause your fondant to get sticky and soft. You can add a little more powder sugar to help with that.

I also coat my hands with crisco when kneeding fondant to keep it from sticking to me.

...fondant doesn't need to be refrigerated....at all.........

I use Toba's recipe, too. I honestly have to have my hands or gloves covered in shortening when add the color becuase of how sticky it get. I usually just throw down some sugar and work it into it until it feels right. I have noticed that when I wrap it up and use it the next day, it feels MUCH better! HTH
