I have made the cake and now I need to carve it slightly. How long do you put them in the freezer for? Do you need to freeze the cake solid or just a little?

What kinda cake are you using? I dont freeze my cakes for carving, but then the cakes i use are prettyfirm on their own. Sometimes refrigerate to set the fillings, but i dont freeze for carving (I freeze only to keep them longer ; )

It needs to be just barely frozen, usually about an hour. If you use a denser cake, then it may not need to be frozen at all.

What do you use in your recipes to make them dense but still moist.
I dont know if you have a Food Lion where you are, But they make the best Lemon Pound Cake ever.
It is very dense but it is very, very moist.
