Okay, I have tried the 2c. whipping cream to 1 lg. package of instant pudding mix. I wasn't a fan. It was heavy and tasted like...pudding.
So I tried the Costco filling posted in another thread, using 1 c. heavy cream to 1 c. milk and the pudding mix. As one person suggested, I didn't use only the chocolate pudding, but used one small chocolate fudge and one small french vanilla in place of the large instant pudding. Not bad, I must say, and pretty darn good.
My husband says I'm not one to leave well enough alone, and I was looking for a new way to make mousse, since the scratch recipe is tedious and way too expensive for most people to order.
I make the Pastry Pride mousse, but that means having to drive to the nearest cake supply store, about 45 minutes away. I don't do a lot of cakes, so that's just a big expense.
So I thought I'd make the Costco filling, but instead of just mixing the ingredients together, I figured I'd whip the cream first, then whisk together the milk and puddings, just until incorporated. Then I poured the pudding into the whipped cream. At first, it didn't look so good, a bit on the thin side. I put it into the fridge while I worked last night and hoped for the best.
Today when I went to fill the cake, the mousse came out perfectly! The pudding stabilized the cream, as I'd surmised it would. The flavor is rich and light on the tongue. I had to add a little unsweetened chocolate to make the chocolate flavor stand out more, since I used a french vanilla and choc fudge pudding combo. But it doesn't taste a bit like pudding to me!
Thought I'd just share what I learned, a successful experiment. There was some left over, so I'm going to call it dessert. ![]()

Hmmm, I have never tried that variation! I'll bet it doesn't taste as much like pudding as using a lg. box.
My kids love "pink milk," the Nestle Quik Strawberry stuff, so I think I'm going to try the mousse using french vanilla pudding, adding the Quik to the milk before mixing it with the pudding. If it works, it could be great for all of the Princess party cakes, and a Charlie and Lola cake. ![]()
I made a mousse filling for a cake yesterday using a box of pudding and the one cup of milk, one cup of heavy cream. It was DELICIOUS!! Everyone loved it, and we were all spooning the leftovers out of the bowl and eating it : ) Anyone who hasn't tried this yet, should. It's really good!!
