I tried the IMBC recipe I found on this site on the cakes I made for my 3 son's joint birthday party and loved it! Do cakes frosted with imbc require refridgeration? Or does pouring the 240 degree syrup into the egg whites cook them enough to be left out? I would like to make a couple of sheet cakes for my husband's football team during live in camp and need to know before taking them in.

Yes it does require refrigeration. I've read on previous posts that you can leave it out for a few hours (I think about three), but any longer and you might have problems. What makes buttercream stable is the amount of sugar I believe, because sugar acts as a prservative much the same as salt does. IMBC does not have as much sugar and the addition of egg whites.

Thanks! Are there any other frostings that are good either with or without fondant that don't require refridgeration?

If you add the PS like the recipe says, you do not have to refridgerate it. There is enough sugar in it. There is a posting on baking 911 about refrigerating frostings. She actually had a mcrobiologist look into them.

I use Julie's less sweet buttercream with fondant works great and does really well without refrigeration. Its in the recipe section if you think you might give it a try.

actually from what i've read IMBC is fine for 1-2 days without refrigeration, because you actually cook the egg whites enough with the sugar syrup. read the post about duffs BC. its a meringue BC (and i think its on the food network website too) and at the bottom it states it can be at room temp for 2-3 days.

IMBC does not need to be refrigerated. It can be at room temps for several days and be fine.
