Wilton Colors In White Chocolate?

Can I color melted white chocolate with wilton paste colors?

I did once & my chocolate seized up. I have since bought the special Wilton colors for coloring chocolate. However, I did read recently that some people add some crisco to the chocolate when melting and then the regular gel paste and they say that it didn't seize up but I haven't personally tried it.

I have tried adding a little bit of Crisco to help keep it from seizing and it does work. You can also buy something called Paramount Crystals which you add to the chocolate that also keeps it from seizing. Finally, Americolor sells something called Flocoat which is supposed to let you use their colors in chocolate . . . i didn't like the Flocoat. I kept having to add more and more to keep the consistency workable and eventually felt like it was impacting the texture of my chocolate. So try the Crisco or paramount crystals. You can buy candy colors, too, which I have and use often . . . but if you've already got paste colors and want to use what you've got then try the Crisco.
