Help! Rich's Bettercream Question!!!!
Decorating By Chericakes Updated 30 Jul 2007 , 2:01am by Chericakes
I sent away for 2 quarts of Rich's Bettercream. I have never used it before. It was definately a liquid when I received it.
I put one in the freezer and one in the fridge because I planned to use some the next day. When I went to use the Rich's it was a solid substance. Is this supposed to be that way?
I thought that it was going to be a whipping cream type substance that was pourable?
When I went to use it, it was already puddinglike and I had to scoop it out. That didn't seem right to me. It also didn't whip up like a whipping cream would be. I wanted to use it for a non-perishable chocolate whipped cream filling for a wedding cake on Sat.
Can someone help with this?
Thank you in advance.
Richs bettercream is really strange stuff. It will whip up from either a refrigerated or frozen state. Pour it into your kitchenaid bowl, walk away for 5-10 minutes and it will whipp up just fine. Be careful not to overwhip, thogh, or it gets a funny texture.
When in the refrigerated state, is it supposed to be a pudding like consistency before you begin whipping, or should it be a lliquid form. It did not pour out of the container, I had to scoop it out with a spoon to get a cupful. it didn't pour.
Rich's Bettercream is supposed to have a liquid consistency that should be pourable when using. Almost like cream.
If you whip it the best temp for the bettercream to be at should be between 45-50 degrees. Which means you can whip it taken right out of the fridge.
You said both were like liquid consistency when you received them. If you put one in the fridge right away and kept it their at the right temp, then it should still be pourable when taken out to use. If you try to use the one from the freezer, then you need to let it thaw to 45-50 degrees before using.
Richs is also sold in the Pre-whip which can be kept in the frig. depending on how much you plan to use. You can freeze it but if you do you need to take some out of the tub and put in the frig On the liquid which when thawed will resemble heavy cream. When you whip this be careful not to overwhip, it will become full of air and not have a nice smooth look when you ice, border or make flowers. If you do overwhip, just add some more of the liquid to the overwhip batch and slowly whip to incorporate the liquid into the mix, again do not overwhip it. It should have a nice peak when whipped properly. Use your wire whip.
I will have to try it taking it out of the freezer, letting it thaw a little bit, then try to pour it. The one from the fridge which was a liquid state when I first put it in there was a thick pudding cream the next day. Should it be even thicker than a heavy whipping cream? I literally had the container upside down shaking it to come out!! Hopefully this will work better when I try it again. Taking it out of the freezer, thaw in the fridge overnight. I was going to use it to make like a chocolate whipped cream for a wedding cake for Sat.

Where did you purchase it from?
I sent away for it from Sugarcraft. Expensive stuff with shipping. I don't do a lot of cakes, so buying a larger size doesn't work for me.
it is called Rich's Bettercream Non0dairy Icing and Filling. I am wondering if maybe I should have put both of them in the freezer first.
Thanks for the info. Chericakes. Darn! I just placed an order with Sugarcraft earlier today. I guess I'll wait for the next round.
Your welcome. I don't know if it makes a difference to you or not, but a signiture is required upon delivery for this. Just wanted to give you the head up, just in case.
I should have put them both in the freezer when they arrived. It says so, on the website by the product. Hopefully the next round will go better.
