Does anyone have a caramel filling for cakes? I have searched the site for one w/no luck. Any suggestions are greatly appreciated!!! Thanks to all for your wonderful help all of the time. There are two main ones that i use
On a yellow cake, i fill with canned peaches, caramel (dulce de leche) and whipped cream(with vanilla and sugar)

On a caramel or white mudcake, i put in caramle (dulce de leche) mixed in with a white chocolate ganache.

nefgaby, i buy my dulce de leche ready made. I just ordered a cake from the wonderful cindww (i live in Melbourne Australia, my cousin in in New Jersey and i wanted to send her a cake) anyway, Cindy was able to buy it in a grocery store in New jersey. I think the brand she got was made by Nestle which is the same as i get here in Australia

A recent thread talked about adding 2 tblspoons of powdered carmel coffee creamer to butter cream - Have not tried it mysef, but people were raving. (and you can not get much easier)

Hi Midgit....I asked the same questin some time ago and this thread followed. I have since done this caramel twice and people just love it. I used it in our daughters wedding cake recently. Read through all the posts as lots of folks had various suggestions.

There is a microwave recipe for making the caramel from condensed milk.
Here is one from Recipezaar.

Caramelized Milk (Cajeta or Dulce de Leche)
Recipe #754123 ratings
In Mexico we call this "cajeta" and it comes in jars in the supermarket, in other Latin American countries it's called "dulce de leche" and it's great on pancakes or toast. Some Mexican dessert recipes call for it, so here is how it's made.

1 cup (aprox.) 28 min

1 can sweetened condensed milk

Empty the sweetened condensed milk into a large microwave safe bowl.
Microwave on medium power for two minutes and stir with a wire whisk.
Microwave on medium power for another two minutes and stir.
Return to the microwave for 16 to 24 minutes on medium-low power or until milk turns thick and caramel color, stirring every few minutes.
Be careful, this will get very hot.

If you let this cool completely, it will be useable alone, or beaten into buttercream.

I recently purchased Nestle Dulce de Leche, which is a pre-cooked version of this. I absolutely loved it. I got it in the Latin-American section of Wegman's, which is the only market near me which sells it.

If you want something you can buy, then look at your local store in the ice cream toppings section. If the ice cream topping is thick it will work great for a filling. There is one that is thick enough but I can't think of the brand right now. There is also a jar of Delce De Leche at my local Walmart.

You can also make it, there have been several posts here laterly about boiling condenced milk. Do a search for it, as there are several ways to do it.

Thank you ladies.... I LOVE LOVE LOVE cajeta and arequipe as well!! I had no clue in to how to make it, I appreciate your comments and recipes!! Can't wait to try this!

I just read that thread. Holy Moly!!!! I never thought of BOILING a can of sweetened condensed milk icon_eek.gif I am off to the kitchen to try this.

IT WORKED!!! YEA!!!! I just opened my can of sweetened condensed milk and IT'S CARAMEL icon_eek.gif Sooooooo YUMMY too. Thanks again for the great tip!!!

Hahaha midgit....I was amazed too when I did it!! And everyone really does like it. I still have some left from doing the wedding cake, it is in the fridge and they just help themselves to put on ice cream or whatever. In the thread I posted some people even do the boiling and then don't open the cans, they just keep them on hand for when they need them. It really is a neat cooking trick....I had never heard of it before. I want to someday make hubby, a huge sweet addict, a good chocolate cake with icing and put the caramel on top with nuts. I think he would just lay down and die!! hahaha He loves the candy turltles.

I have tried the Marzetti caramel apple dip - it is wonderful and has a thicker consistency so it works well as a cake filling!

Midgit,

My 15 year old daughter just made dulce de leche in the oven two nights ago. She used it to fill sandwich cookies, because she was making an Argentine recipe for her fiesta in Spanish class. It was absolutely wonderful!! I was so proud of her. I am going to use that recipe, next time.
