I use wilton gel coloring and have been having problems with it (or maybe it's me!). When I color the icing, usually blue or tan for some reason, it looks completely mixed and even, and then when it dries, there are little spots of dark coloring on the cake. What's wrong? I thought my color might be old, but a new bottle did the same thing.
Thanks for any ideas or suggestions.

Is the spots (if you took one off the cake) hard chunks or just gel.

Just dark little bits of gel that weren't there until the icing dried on the cake. I keep looking back in the bowl that I mixed the icing in, and that icing looks fine, but it hasn't dried yet.

I've had problems with spots too, but I think they were lighter rather than darker. I read (on this forum, of course) that if you put salt in your frosting, the undissolved salt can cause spots. The next time I make frosting I'm going to dissolve any powders (besides powdered sugar) with the liquids that are supposed to go in the frosting (water/milk, vanilla extract). If that doesn't work I am going to try switching from Wilton colors to Americolors.
