Wedding Sheet Cake Questions...

I have a Bride wanting sheet cakes to go along with her 3 tier cake.
I have a 12x18 sheet cake pan (pretty typical for 1/2 sheet cake right?). How many servings would that serve one layer and how many would it serve filled?
Then, how much would you charge for that...for a filled cake and then for a simple one layer cake?
Thanks for helping. I've never quoted a Wedding Cake that had kitchen cakes too. I just want to be prepared when I meet with her.

I only do sheet cakes that mimic the wedding cake (meaning they have the same number of layers, once cut all guest are getting the same cake, instead of some getting one layer and others getting multiple layers).
My 1/2 sheet (4" tall) serves 88. I charge $1.75 per serving, the kithcen cakes have no deco, only border. If the client wants a deco on each piece it is priced accordingly.

This is the chart I use.. http://forum.cakecentral.com/modules/Forums/files/cake_serving_guide_219.pdf. It says that single layer unfilled will serve 54 cut 2x2x2 and a double layer filled will serve 108 cut 1x2x4.

My question would be "Why do you want sheet cakes?" Most brides order them because they've heard it said "order extra cake 'just in case'."

As I posted once before, when I had a bride who wanted a sheet cake "just in case", she was surprised when I also upped her food order by 50. So I asked her, "You're not expecting these unexpected guests to show up just for dessert, are you?" icon_confused.gif

When I work with them for an accurate headcount, they don't need an extra cake "just in case".

Since my cake package also includes forks, plates, punch, etc., then I ask them, "So you want 100 of your guests to have cake on a plate and punch to drink, but 50 of them get cake on a napkin and they have to drink from the water fountain?"

My sheet cake pricing does not include delivery, table linens or the labor cost of me staying to cut the cake. So I also inform them "You're getting the same amount of cake, no matter what pan I bake it in."

A 3-tiered cake that is just iced with a ribbon around it is no more difficult than a plain iced sheet cake with a border. They don't get a discount for a 3-tier cake that is decorated that simple, so why should a sheet cake, decorated that simple, be cheaper?

THe only time I did sheet cakes in addition to the wedding cake was for my cousin 20 years ago. And we never cut one of those sheet cakes that her dad was just POSITIVE we would need.

I've catered weddings where a cake was ordered from someone else and I've seen sheet cakes sitting in the kitchen.....uncut and unused.
