I Need Non-Perishable Filling Suggestions...please!!!

Hi all!
I'm planning on making a darn good choc and WASC cake for a wedding... they'll both be covered in mmf. It seems, from reading these boards (which I'm addicted to!!!) you shouldn't put a cake with mmf in the fridge. So my question is, which fillings do you recommend for these cakes that are non-perishable or can I fill with a cool-whip based filling and just bite the bullet and stick 'em in the fridge?? I would love your opinions!!! Thanks for helping a newbie icon_rolleyes.gif

raspberry would work in both.

most jam based fillings would work

and of course boring old buttercream (which you could flavor or mix w/ a jam/fruit puree for a firmer, tastier filling)

The sleeve fillings are pretty good and can sit out... I get them at country kitchens www.countrykitchensa.com

I am with Doug....Raspberry would be great! In fact I found one on here that is non-soaking and WOW it is delicious!!!!

OK, maybe this is a stupid question but I thought that all filling expect for Buttercream had to go in the fridge... Am I wrong?

Sleeve filings are great and not perishible. I get mine at Cash & Carry or you can order them online. I put my fondant cakes in the frig. all of time. If it's hot or humid out your fondant may sweat when you take it out of the frig. but it'll evaporate after a couple of hours.

I have also made mousse type fillings that are ok to sit out for about 48 hours. It a combo of pastry pride, dry pudding mix and flavor of your choice. I actually just made one with pastry pride and raspberry jello, it was really light and yummy. You can also flavor Sams Club BetterCream and it can sit out of the fridge for 5 days according to the bucket
