Need Help Fast! :)

O.K. I have a cake due early Sun. and I have filled and crumb coated tonight. It is carrot cake w/cream cheese filling. My question is do I just put it in the fridge tonight w/out wrapping it or should I wrap it w/plastic wrap.

I am new at this and am thinking out every step. icon_redface.gif

Tomorrow late afternoon I will cover with fondant and fondant decorations. Should I let it come to room temp before covering with fondant?

Any suggestions?

I always cover. I'm afraid it would absorb any odor that might come from other foods in the fridge. And I have covered chilled and room temp with fondant. I like it a little chilled if the icing is firm I don't have toruble with it shifting under the fondant while trying to smooth it. I've read in other posts that people don't recommend it because it may cause problems when if the icing starts to "sweat underneath" but I haven't encountered this problem yet.

Do you wrap it after it has crumb coated? Does it stick to the wrap when you take it off? And do you use plastic wrap?

let it sit for a minute and it should crust enough so it won't stick. and yes, i would use plastic wrap. good luck! (i personally have NOT wrapped them and they've been fine, but it wouldn't hurt of course!!)

I would think that if you were to wait until it has crusted before you cover then when you take it out, take off the plastic wrap right when you take it out of the frig that it wouldn't stick but since it is a crumb coat you could always smooth it a little if it were bothering you with viva or parch. paper. I can't answer the fondant portion of your question, but I always bake, fill and crumbcoat a few days prior to the delivery. I usually put the cake in a box, then wrap the box itself in like a big grocery store bag, tied. Keeps any odors out and the box protects the cake from the plastic sticking for whatever reason. thumbs_up.gif

I think I will try that and then wrap the box.

I always at least put my cakes in a box and I haven't had any problems. The covered box is enough to keep any funky flavors out of the cake and to keep the cake relatively moist.
