So this is an odd request, possibly stupid question, but here it goes..........
I had a customer order a two tier buttercream with fondant cherry blossoms, but they asked if I could make the buttercream less sweet.
Is that possible, I mean the stuff is after all pure sugar? ![]()

I don't care for really sweet BCF either. What I do is add 1/2 tsp kosher salt to my water and vanilla. You have to be sure it disolves all the way or you'll get funny little crystals in your icing. You can add more in additional liquid if you need to. (This is for a single recipe, double it to 1tsp if you double the recipe, won't hurt a thing!)
I also add melted white chocolate to my icing. For some reason, it cuts the sweetness also. Weird but it works.
