In 4 wks my son is getting married. I have to travel with the cake 1 1/2 hrs on a Fri. morning for a Sat. pm wedding.
The cake will be a fondant stacked - 4 high and I will put it together at the hall.
My question is - if I bake it this week and freeze it can I put the filling in and put each layer together?
It will be filled with a mixture of cool whip and seedless raspberry jam (1 tsp. to approx. 3 cups of cool whip).
Should I dam it with buttercream?
I was planning on crumb coating after thawing. Is this the best way?

Any help would be greatly appreciated.
Gloria

I dont see a problem with that at all. I know a few people who do just that. They also dam it with the crumb coat AFTER thawing. Of course with fondant they wait until the last reasonable day or minute to put the fondant on.
