Hello, I am making some cakes and cupcakes for a grad party tomorrow and was curious if I need to refrigerate them. One cake is marble with oreo filling (heavy whipping cream and oreo pudding mix), another cake is red velvet with cream cheese frosting and then a filling of cream cheese w/cinnamon, milk and a little pwd sugar??

Please let me know as I don't have tons of space in the fridge and don't want to put something in there that doesn't need to be. Also curious if they need to be refrigerated before the party of if they can sit out. Thanks.

yes, keep them in the fridge! any time you have a cream cheese or heavy whipping cream ingredient it should be kept chilled. i would take them out of the fridge maybe 20-30 min before they'll be eaten, let them sit out for maybe another hour, then back in the fridge. i know that at weddings they sit out for 4-5 hours sometimes and no one gets sick, but why risk it when you don't have to?

oh yeah you are going to want to refridge both. The whipped icing will turn to a watery sludge and the cream cheese will make everyone ill if you don't refridge.

Here's a cream cheese frosting that doesn't require refrigeration:
