I have a client that wants a baby shower cake for the 8th of October, however I'm going out of town the 29th of September for 9 days and she wants to know if I can do the cake before I leave and her freeze it until the shower. The problem is I wanted to cover the cake in fondant, if not I was gonna do BC with fondant accents. Will this work? Please somebody help me!! Thanks in advance.
Everything I've read says you shouldn't freeze fondant but my instructor who has been making cakes for 30 years says that you can. She said you need to prepare as you do with buttercream but when it comes time to defrost, you need to that more gradually, like let it thaw in the refrigerator first and then bring it out and let it come to room temperature. I think there will probably be some condensation on top of the cake (and I would consider dark colors possibly bleeding) but if it's left alone for a while the condensation should disappear without any ill affects.
