Making A Cake In Advance?

Tonight I was at a bridal shower, brought the cake for the bridal shower...and was curious to know who was doing the bride's wedding cake...well turns out the person making the cake is someone I know.

Well as conversation proceeded...I asked where this person was at (wondering why she wasn't at the shower)...and find out this person is at home...MAKING the wedding cake icon_eek.gif

Now forgive me if I'm just stupid...but if the wedding is not until 4 August...9 days away...why make the cake so far in advance icon_confused.gif

I can't fathom making a cake that far in advance...unless you plan on freezing it...but still is that normal?!
Granted grocery stores will often freeze cakes, but why do this to a wedding cake?! Maybe it's just that I'm being overly concerned...but I just don't want the brides cake ruined. Grrrrr so frustrated b/c I can't do anything about the situation thumbsdown.gif

Even if she was freezing it, isn't it weird that she was at home at that time baking it? If she was just gonna freeze it, why not do it another time so she could go to the shower?

I can understand you being frustrated because you want her cake to be fresh. I guess the bride knows that her cake is already being made and she is okay with it.

I usually make my cakes in advance and freeze them...I have only had rave reviews about how moist my cakes are... and I don't do anything special. I frost them frozen as well.

I love it when a bride raves about my super moist and fresh cake and condemns cakes that are frozen. I've asked them, "So you want your cake to taste just like that one, then?" When she enthusiastically says yes, it's fun to watch her face when I tell her the cake she's eating has been in my freezer for 3 weeks. icon_lol.gificon_lol.gif

But I'm with the above post ..... why would she not schedule her time so she could be at the shower?

That does seem a little strange that she would miss the shower just to do the cake. I just started freezing my cakes a few weeks ago and I have gotten rave reviews on how moist they are so I pick a day and I spend hours baking until I have my quota that I keep on hand. I put it to the test the other day and brought one to my office that had in my freezer for two weeks and it was amazing at the compliments I got on it. icon_biggrin.gif
So I am an avid cake freezer.... icon_lol.gif

um, not everyone really loves showers, you know. ,aybe she just had other stuff to do?

If I had a dollar for every comment that I've heard about frozen cakes being horrible I could retire. I'd like to know to who started that nonsense - probably someone who was trying to undercut her competition icon_lol.gif

I also freeze and frost my cakes partially frozen. Alway super moist and delicious. I read on baking 911 that the freeze/thaw process can improve a cake in moisture and texture. I also get rave reviews. I just bet this lady has a busy schedule and is doing the best she can like we all do. icon_biggrin.gif

Well, she could have been making some of the decoratings, not just baking I guess. : ) But it did seem like she was just trying to get out of going to the party , LOL.

I think I got the idea that frozen cake was bad...b/c that's the stigma that most people associate w/ cakes that are mass produced by grocery stores - I remember reading threads along that line when I was new to CC.

In regard to the person who skipped out on the bridal shower to start baking the actual wedding cake - she doesn't do cake decorating all that often -she has never worked w/ royal icing, fondant, etc., just your canned frosting/boxed cake mix -and not knocking the cake mix...but from what I have heard, she plans on using canned frosting...come on the least you can do is make a good BC frosting...and not something that tastes like it's been in a science lab icon_rolleyes.gif

Sadly I can't wait to see the cake that has been created - and while I promise not to make any tacky/petty remarks...I know I'll be thinking them icon_redface.gif

I do think as a gift, I'm going to give the bride/groom a certificate for a free 6" cake on their 1 year anniversary.
