There's a book called candy making for dummies which I think is great. Lots of candy recipes and recipes for fillings. Plus some candies can be used as fillings.
In the world of pastry, the answer in chocolate ganache.
In my world, it's NUTELLA!
I like the cremeco brand. They have them here for retail: http://www.countrykitchensa.com/catalog/Searchresults.aspx?Description=cremeco
and here for wholesale: http://ckproducts.com/search.asp
and of course there's ganache and fondant that you can flavor with loranne oils.
Thanks all of you- I made my own fondant years ago and never like it. So I confined myself to truffles, nut clusters and popcorn for melted chocolate candies. I thought molded chocolates with a soft creamy filling might be fun to do. I had seen the cremeco brand and wondered if it would be any good. The packets didn't look too expensive and a the molds aren't a major investment so I thought I would ask before I sent in an order. I never thought about using nutella- good thought.
