To all of u CC members that make a lot of wedding cakes. If I want to buy some tasting samples (cake,frosting,filling) of course that can be mailed and close to NJ, can it be done?

I'm not quite sure whatI want for the layer of my wedding cake yet, I'm becoming my own birdezilla. I tried and like lemon/rasberry filling/bc. No chocolate please. White cake/cherry/bc and yellow/strwberry/bc. The problems is that I have too much leftover cake that goes to the trash, and is getting too expensive trying out a lot of the deliscious cakes u guys mention in the site.

So I figure it out that will be easier if I buy some samples of the recipes that are here and then go with them, without making a whole batch of it. I'm learning and don't have a lot of supplies or equip.

JMHO, why throw it out. Give it to friends, neighbors, etc. But I can't answer the question of mail order cakes, icing, etc. The cost and freshness are in question. I have made cakes for a long time and just love trying out new ones. I freeze the cakes with the recipe name on it. So that later I can retaste it. Or use it in my classes that I teach.

Save your leftovers and make cake balls. You can take your scraps and freeze them.

Why don't you consider making cupcakes and filling them with the filling you want to try? That way you can pass out the cupcakes to friends and family and ask for their opinions as well as giving them treats.

This is a great idea. I have been making cakes for so long (36 years today!) that I go and cut my own wedding cakes. That way, I get instant feedback on what tastes good and what doesn't.

Another thing I do is make up a new recipe and bake it in very small (4"-6") pans. This way, I have a small sample for myself and can take one to work or give some to the neighbors and get feedback.

Eventually, if you've been doing this long enough, you will probably get to the point where you can read a recipe and KNOW if it's going to taste good.
