I just uploaded a photo of the cake I made today. It is Coconut-Pineapple Cake w/Pineapple Filling and White Chocolate Pineapple Cream Cheese Icing and coated around the sides with coconut. That's a mouthful!!
I love to bake for the guys in our Homicide Bureau (I work for the police dept). Last week, one of the guys asked if I could make a Coconut-Pineapple cake. I was up for the challenge and went on a search for a great scratch cake and I think I found it.
The recipe is a Southern Living recipe contest winner that I tweeked to my satisfaction. I added some Coconut Creme Coffeemate liquid creamer to the batter and it really enhanced the flavor. Then I tweeked the Cake Mix Doctor recipe for White Chocolate Cream Cheese Icing by adding some pineapple juice. I think this is going to be a really good cake!!

This is a freebie, but I am trying to make more scratch cakes, so it was good pratice. I bake for these guys and some others in my building, just because I love to bake.
Plus, these guys are so overworked and I think they deserve a treat once in a while.
I go into withdrawals if I don't have something to bake at least once a week!! Is this a sickness???

Very nice cake. Sounds yummy. Looked at your gallery and good job on your cakes. Have you ever thought of doing a cake with a outline in chalk? LOL
