If I double up a cake recipe, do I double up the baking time also?

This recipe is for 2 9in round, I would like to do one 10in-3in high pan.

No - you don't want to double your baking time. Set the timer as indicated on the instructions and check it every five minutes after that. Make sure you don't fill you pan over 2/3 full (if the recipe calls for 2-9" pans I don't think it will all fit in a 10" x 3" pan - but there are charts on the Wilton site and in threads here telling you how many cups of batter for pan sizes). I suggest you use a heating core or flower nail.

It helps to transfer heat to the middle of the pan when baking. Just grease the nail well and insert upside down in the middle of the pan before putting in the batter. I use it for almost all pans over 9" or if using a 3" high pan).
