Decorate Then Stack? Stack Then Decorate?

I have to make 2 different 2 tiered cakes.
A girly 6 inch round on a 10in round -BC w fondant accents
A mans disco half sphere on a larger square cake-BC bottom/sphere is BC w fondant squares adhered
My question is Do I stack cakes then begin to decorate OR Do I decorate seperately then stack and say a little prayer?
Please help I am new and I have to do these both next weekend and have never done 2 tiered cakes ![]()

Hi ChristineMarie - it really depends what you want to do. I always ice or cover in fondant before stacking. I do most decorating before stacking as I find it easier. But some decorating I do after stacking due to the nature of how I would want the cake to look. For example, obviously any borders would be after stacking, do you want fondant or buttercream accents to run through both layers, etc...
I have only done two tier cakes and have two more to do this weekend. Don't know if this is the best way but I ice both tiers or cover in fondant and then stack them. Then I proceed to deocorate them stacked. It has worked good for me but not sure how others do it.
I decorate before stacking, transport un stacked.........then stack at the site. I always take a repair kit with to touch up and fingerprints and icing that gets messed up. I would not be able to decorate after stacking, because at the site, there are usually people there decorating, setting up chairs, etc.........and I really do not like an audience when setting up.......it's quite nerve-wrecking.

How on earth did you stack those cakes without loosing the border? I am impressed. Love the baskeweave one.
